Project Description
Sugar crystallization is the process by which sugar molecules arrange themselves into a highly ordered, solid structure, forming crystals. This phenomenon is fundamental in the production of many sugar-based products, such as candies, rock candy, and certain confections. Sugar crystallization works by the following stages: 1) Supersaturation: it begins with dissolving sugar in water at high temperature to create a supersaturated solution, meaning it contains more sugar than can normally stay dissolved at room temperature, 2) Cooling and Nucleation, as the solution cools, sugar molecules start to stick together, forming small clusters called nuclei. These act as the starting points for crystal growth, and 3) Crystal Growth where additional sugar molecules attach to these nuclei, causing the crystals to grow larger over time.
The control factors of the crystals crystallization include size and quality of sugar crystals depend on factors such as temperature, heating rate, concentration, agitation, and the presence of impurities or seed crystals. Important Considerations:
To obtain large, clear crystals, controlling heating rate, cooling rate and avoiding agitation during crystal growth is essential.
The adjustable heat exchanger invention allows to obtain slow and fast heating rates as well as slow and sudden cooling that assure enhancing crystal quality.

The Patent and Scientific Discoveries Reward in 2018 granted from the King Abdullaziz University (KAU) from Deanship of Scientific Research and Vice Presidency for Business and Knowledge Creativity as well as Inventions’ Excellence Award from the Souq Okaz festival in 2017.
